Fightin' words!

I do love some good N.C. BBQ. A good friend of mine and I used to do a BBQ trip at least once a year, and went all over the place. However, of the places I've been, the best I've had is Austin. Most places I've been can all pull off amazing things with pork, but Austin does things with beef that I didn't imagine was possible. If done right, a beef rib is every bit as good as the best pork rib you've ever had, but they're about the size of your ulna. If done poorly, they're terrible though.

My goal is simple. It is a complete understanding of the universe, why it is as it is and why it exists at all.

Love me some BBQ but out here in California, it's grilled even though we call it BBQ.

Santa Maria Style "BBQ" is found in my area all the time where folk bring their truck hauled grills on out and fire up an ass full of oak and mesquite and grill up chicken and tri tip serving it with garlic bread, salsa, pinquito beans salad and soda's/beer.

Shit it's good stuff and it was invented in Santa Maria 60 miles from my home.

Then, there are the interesting taverns and restaraunts serving up grilled beef, chicken, game (duck, quail, buffalo and a whole host of other stuff)

My favorite is duck and sirloin, salad, salsa, garlic bread and grilled artichoke.

Agreed! Down East BBQ is the best. Lexington is way too heavy with all that red sauce. Vinegar is all you need!
