Head west to Nantahala National Forest and explore the hundreds of miles of twisties along the Dragon, Cherohala Skyway, Rt 28, and others. Stop by Asheville along the way which is a pretty cool town with lots of great food and Appalachian artwork.
I probably won't be able to make it so don't plan around me. My bike is currently down for maintenance and my family is about to get bigger. If the trip is in Sept, 25% chance I'll be able to sneak out for a day trip.

I'm heading out on a 33-day west coast and back on September 2, so I probably won't be able to do one this year. In addition to what Sckill said, the area around Little Switzerland, NC has some awesome roads as well - across NC/TN/VA.
Certainly up for local rides too as time permits!
